Seafood Tajine

Ingredients

  • 1 sachet Fish Substitute
  • 1 red pepper
  • 1 courgette
  • 1 dried apricot
  • 4 sprigs of fresh coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ras hel hanout
  • 1/2 teaspoon cumin

Preparation

  1. Chop the coriander. Reconstitute the fish substitute by adding 100ml of water and the chopped coriander.
  2. Let sit for 10 minutes. Make 6 to 9 balls (depending on the size) in the palm of the hand.
  3. Bring 250ml of water with the spices to a boil.   Wash and cut the courgette into slices. Wash and seed the red pepper. Cut it into pieces.
  4. Cut the dried apricot into quarters. Simmer the vegetables and the fish balls in the spiced water. Add the pieces of dried apricot last of all so they retain their colour.

Serve with: couscous.
