Tomato and Thyme Tart

                                    Ingredients
For the pastry:
- 150g bread and pastry Mix
- 1 pinch of salt
- 50ml olive oil
- 100ml water
- 3 sprigs of thyme
For the filling:
- 130g tomato purée
- 10g egg substitute
- 100ml water
- 3 tomatoes
- A little parsley
Preparation
- Add the salt to the Bread and pastry Mix.
- Crumble the thyme and combine into the mixture.
- Add the water and olive oil in one go.
- Mix until a uniforme dough is obtained.
- Roll out the dough and cut it into whatever shaped biscuits you like.
- Prepare the tomato purée.
- Add the egg substitute and then the water.
- Spread this smooth mixture over the pastry base.
- Cut the tomatoes into thin slices and arrange them over the top. Bake for 25 minutes at 180°C (gas mark 6).
